Shaheen of Malabar Spices had asked me to compile few recipes from my blog which are simple enough for an amateur cook, to help out her sister in law!
I am sorry I am late Shaheen...these are the recipes that I have blogged so far which I feel are easy to prepare. Hope it helps.

From The City of Brotherly Love....Philadelphia!


Yes guys I received this lovely card this morning and it has travelled all the way from Philadelphia,Pennsylvania and the mystery blogger who sent this to me is Stella!

Stella,thank you very much for this card or as the Italians say Grazie Stella!I love this card and can't express how happy you have made me.It has been an amazing experience that I shall cherish!

The postcard shows the Italian market in Philadelphia which is Stella's favourite place to shop for its real Italian meats,fresh farm veggies and the best cheeses!

Crunchy Chicken Fry


Ingredients

Chicken drumsticks = 4
Egg = 1
Bread crumbs = 1cup

for the marinade
Ginger(chopped) = 1tsp
Garlic (chopped) = 1tsp
Green chilli = 1
Coriander powder = 3/4tsp
Red chilli powder = 3/4tsp
Turmeric powder = 1/8tsp
Garam masala powder = 1/2tsp
Cumin seeds = 1/4tsp
Lime juice = 1tsp
Salt = to taste

Method

Clean the chicken ldrumsticks,Pat dry and make few slits on them
Grind the ginger,garlic and green chilli to a paste using minimal water or oil
Make a paste of all the marinade ingredients using lime juice
Marinate the chicken for an hour atleast,refrigerated
Beat an egg,dip the marinated chicken leg into it and coat it with bread crumbs
Heat oil to deep fry using high heat and then reduce the heat,so that the chicken cooks through while frying
Deep fry till brown on all sides,Drain excess oil
Serve hot with onion rings and lemon wedges

Sautéed Mussels


Mussels* are one of my most favourite among all seafood.Sautéed Mussels is a very quick and simple to prepare dish using mussels.I have not used very many spices because mussels themselves have a very nice and a distinct flavour of their own which i didnt want to alter

* Slender black bivalve mollusks with a blue inner shell and they live attached to rocks and other hard surfaces along coastal areas in many parts of the world.

84.9g of Mussels(cooked,moist heat)contains 20g Protein,6.3g of Carbohydrate,3.8g Total fat.They are also a good source of Zinc and Folate and an excellent source of Selenium and Vitamin B12.

Ingredients

Mussels(frozen meat) = 300g
Onion(big) = 1
Red chilli powder = 3/4tsp
Turmeric powder = 1/8tsp
Curry leaves = 6 to 7
Salt = to taste
Oil = 2tsp

Method

Thaw the mussels meat,rinse in water about 2 to 3 times
Marinate the mussels with red chilli powder and turmeric powder,keep it marinated for 15mins


Heat oil in a pan fry the curry leaves and then fry finely sliced onion till it turns dark brown
Add the marinated mussels and salt and fry till it turns golden brown on both sides
Serve hot as a side dish with rice

To My Postcard Buddy!


It is always difficult to leave what is familiar behind and move on to new things.This is what I felt 8 months back before I came to Switzerland for the first time.Today the August 1, is the National Day of Switzerland.My heart fills with joy and lots of gratitiude to this small country which is now my new home.

I live in the Canton of Valais, which is an alpine region in the South of Switzerland famous for its mountains and also for its wines, in a beautiful,typically Swiss,small town called Leukerbad.It has been known for its hot springs, with therapeutic and curative qualities and is Switzerland’s largest thermal spa holiday resort.

3.9 million liters of water a day emerge from a depth of several kilometers at temperatures of up 124° F (51° C), and the water is rich in lime and sulphur elements that, with the warm water, are claimed to alleviate the symptoms of skin diseases, arthritis, gout, gynecological conditions, weak circulation, and paralysis. The climate is also said to be stimulating (thanks in part to large quantities of sunlight),and the double whammy of healing waters and a healthy climate has led to the establishment of modern clinics for rheumatism, polio rehabilitation, and neurological disorders.

This is a postcard of my hometown,Leukerbad and its special because my own home is in the picture!Since its our National Day today,the postcard will be here with me only for today(mail offices are closed),but I will be the first to reach the mail office tomorrow to post it for my postcard buddy!Meanwhile,I am trying to patiently wait to receive a card:)
