Egg Rice

This quick and easy to make rice is what I make when I am very lazy to cook something elaborate.This is also what I like to eat when I dont want to eat something elaborate too:)!Even back at home in India,there are some days when I would prefer a very simple meal,so thats when I make it and love to eat it with some tomato ketchup!

Ingredients

Rice(cooked) = 2cups
Egg = 1
Tomato = 1/2
Onion = 1/2
Green chilly = 1
Coriander powder = 1/4tsp
Turmeric powder = 1/8tsp
Black pepper powder = 1/8tsp
Fennel seeds = 1/8tsp
Mustard seeds = few
Curry leaves = 2 to 3
Oil = 1tbsp
Salt = to taste

Method

Heat oil,splutter mustard seeds
Add the curry leaves,slit chilly,fennel seeds,chopped onion and saute till onion turns light brown
Add the coriander,turmeric & pepper powder and fry for 3 to 4 seconds
Add the chopped tomato,and fry for a minute
Add the beaten egg,rice,salt and mix thoroughly
Serve hot

I used to make something similar to this long time ago. That was my instant way of dressing up some leftover rice. I haven;t made it for a while. Will do it again.

I came home very tired today from work (yes, was working on sunday..bohooooo). So, I saw your comment, came here and saw some new ones. So, checked the egg-rice one as the name looked interesting. I had all the ingredients, so was glad about that and it looked so easy. I just made it and had it. Thank You for the wonderful and easy recipe. I loved it. This will be my regular recipe from now on, it seems. I never thought of adding eggs to rice like that...wow.

Also, as a bonus, I am leaving a link which has picture of the dinner I just had...

Nice recipe. Will try this soon and let you know. You have a nice blog going on. My first time here.
The picture of the jello on your window sill with the Swiz flag flying on the side, beautiful picture. The view outside looks green and pretty. Lucky you to be in a lovely place like Switzerland.
Cheers,
