Mutton Biryani (Pressure cooker method)

For the first food post of this year,here is a recipe for a delicious dish coming all the way from India.It comes from a very special person in my life....my sister,who is ever so sweet and loving!

If you want to prepare biryani in a jiffy without compromising on its taste,this pressure cooking method is definetly it.I always follow the conventional method for preparing biryani and was skeptical at first to try the pressure cooker way,but since this method has worked well for me,I now follow making biryani this way,it saves me a lot of time & energy!


Ingredients

Basmati rice = 2&1/2 cups
Mutton = 500g
Mint leaves(chopped) = 1/2cup
Coriander leaves (chopped) = 1/2cup
Onion(big) = 4
Tomato = 1
Lemon juice (from half a lemon)
Coriander powder = 1tsp
Turmeric powder = 1/2tsp
Pepper powder = 1/8tsp
Salt = to taste
Oil/Dalda = 4 to 5tbsp
Hot water = 3cups

to grind(smooth paste)
Ginger = 1inch
Garlic = 8 - 10 cloves
Green chillies = 10

whole spices
Bay leaves = 5
Cloves = 5 to 6
Cinnamon = 1inch
Fennel seeds = 1tsp
Star anise = 1
Mace = 1

Method

Heat oil in a pressure cooker and add the whole spices,fry them for 10 seconds
Add the roughly chopped onion and saute till it turns light brown and then add the chopped mint and coriander leaves,ground paste and fry for 2minutes
Add coriander powder,turmeric and pepper powder and the mutton pieces,saute for a while and then add lemon juice and diced tomato
Allow to cook for about 10 to 12 minutes


Add the rice(soaked for 30mins & drained)and fry for a minute


Add the 3cups of hot water,salt and mix thoroughly


When it starts to boil,close lid and cook till a whistle
Remove from heat,open the lid of the cooker once the pressure inside has decreased

Serve hot with raita

By the way, if you add2tsp ofcashew paste,that taste wouldbe different from this littlebit.try out this way once and enjoy the rich taste...

Shaheen in this method we do get the grains separate but every rice is different,so i think it would be better to standardise the amount of water used depending on the kind of rice you use.

wow, one pot recipe. easy clean up :) One of my friend gave me a similar recipe but she completes the process by cooking in the oven. I prefer your recipe now, since everything is done stove top.

That's a nice recipe using pressure cooker method. Sometimes I go the pressure cooker way when I am in a rush..:).

Btw, thanks for the informing me regarding my photo being lifted by food.sify.com. It has been there for atleast 2 months now and had quite a few people informing about it. I wrote to them about it, to remove the picture, but they didnt have the decency to remove the image. Very unfortunate that a reputed site like sify resorts to such plagiarism.

I have tried several pressure cooker biriyani with so so results. Always gets the rice mushy in this way. I do make biriyani very often, the conventional method. I hope I get the pressure cooker method right using your recipe. Sounds great.

I have been browsing through foodie blogs, and came across yours, this mutton biriyani recipe looks great! My oven is broken (I'm still debating as to whether to get it fixed or remodel the kitchen), so I wasn't making biriyani for a while, I'm definitely trying this recipe this weekend!

did i tell u that i tried this? and loved the flavor though yes, my rice did get overcooked. i think the meat here needs only 2 whistles(2 minutes after the first whistle) and its done. i remember my mom cooking the meat forever in kerala.but yes, the flavor is correct and the work instant.thanks!

Shaheen - Oh!I think what happened was while you allowed it to simmer there were more whistles,I think i should remove the line i mentioned about simmering,coz for the rice not to get overcooked its important that no more than a single whistle comes!If we arent using a gas burner then it takes a lot of time for the heat to reduce.

None of the other comments (non-anonymous) show that they have actually tried cooking it. I did and here is my experience:

1) Taste is ok, not bad. Quite authentic. But it took 2 hours!

2) Can use beef instead as mutton is very expensive. Use 1 Kg.

3) Please specify teaspoon, tablespoon etc and using international measures. This is because garlic flakes etc can vary in size a lot.

4) Cut the meat, add 1 cup of curds (or in USA, store bought buttermilk). mix the ground and powder spices with the meat and then sautee.
I modified the amounts as follows;
for 1.5 kg meat:
3 tsp coriander powder
5 cloves garlic
5 green chilli
3 tomato
3 bay leaf

5) In the final step, add some cut up raisins or prunes to the rice while boiling.

1)glad you found the taste not bad,Quite authentic - maybe I dint say its the authentic way of preparing a biryani,it took 2 hrs -u mean the preparation and cooking time!I am surprised!anyway a biryani always does takes time to make,

2)Oh yes,we can use beef,as i have already answered to one of the comments above.Mutton expensive....well yes!but when I am making a mutton biryani....I cant replace it with beef

3)Yes garlic flakes differ in size and its difficult then to get the amount right,but you know the standard way of mentioning the amount of garlic used is in flakes,I am sorry if it created some ambiguity!

4)the way you have listed the ingredients here also doesnt seem to abide by any international measures,garlic flakes,chillies,they all can vary in size right!

5)Oh yes you can add them if you like,i have added them in the biryani recipe i have posted earlier
in short I can only give a recipe but you have to use your intuition and some food knowledge,consider your likings and modify the recipe

I browses through your site some time back and had printed this recipe. I got around to making it yesterady (substituting Chicken for the Mutton and grinding the cilantro/mint along with the garlic, ginger and chillies).
It took me about 40 minutes to the point I closed the lid of the cooker (cutting veggies, making the paste and soaking rice included). So I am in love with this recipe. It fast and tastes delicious.
