Chicken in Hot Sauce

Its been a long time since any new food post in my blog,couldnt blog all this while....very sorry for that dear friends...to make up for that,here is the recipe for a very yummy dish I made last weekend.



Ingredients

Chicken breast = 200g

for the marinade

Cornflour = 2tsp
Red chilli powder = 1/2tsp
Dark soya sauce = 1/4tsp
Oyster sauce = 1/4tsp
Salt = a pinch

for the hot sauce

Peanut oil = 2tsp
Green onion = 1
Spring onion stem(chopped) = 1tbsp
Orange bell pepper(diced) = 1cup
Ginger(grated) = 1tsp
Garlic(grated) = 2tsp
Sambal oelek = 3/4tsp
Hot & sweet chilli sauce = 2tsp
Hot sauce = 2tbsp
Dark soya sauce = 1/2tsp
Oyster sauce = 1/2tsp
Cornflour = 1/2tsp(dissolved in 3/4cup water)

to garnish

Spring onion stem(chopped) = 1tbsp

Method

Cut the chicken breast into cubes
Add all the ingredients required for the marinade in a bowl and combine it well adding a few drops of water
Keep the marinated chicken refrigerated for about 30min
Heat 2tbsp peanut oil and shallow fry the chicken cubes till they turn brown
Drain on absorbant paper

To prepare the sauce,heat oil
Add the diced green onion,diced onion and diced bell pepper
Saute them for a minute and then add the ginger and garlic,continue sauteing for about 30 sec
Reduce the heat and add the sambal oelek,chopped spring onion(stem) and all the sauces
Add the fried chicken
Add the dissolved cornflour solution and combine well,turn off the heat
Check before adding salt
Garnish with chopped spring onion
Serve hot as a side dish with plain rice/ghee rice/jeera rice/roti/naan

What a simple yet delcious recipe! In Chinese resturanst the chicken usually coated with batter before deep-fry, but it's a tedious work in home-kitchen, and my result tends to end up soggy. I'll try your lovely version next time!

Priya....oyster sauce.....mmmmmm...this is the first time I used oyster sauce in my cooking too.I believe you must not skip it Priya..so buy one bottle plz:),you can add a dash of it in all Indo Chinese dishes,noodles etc.
