Mutton Biryani (Pressure cooker method)

For the first food post of this year,here is a recipe for a delicious dish coming all the way from India.It comes from a very special person in my life....my sister,who is ever so sweet and loving!

If you want to prepare biryani in a jiffy without compromising on its taste,this pressure cooking method is definetly it.I always follow the conventional method for preparing biryani and was skeptical at first to try the pressure cooker way,but since this method has worked well for me,I now follow making biryani this way,it saves me a lot of time & energy!


Ingredients

Basmati rice = 2&1/2 cups
Mutton = 500g
Mint leaves(chopped) = 1/2cup
Coriander leaves (chopped) = 1/2cup
Onion(big) = 4
Tomato = 1
Lemon juice (from half a lemon)
Coriander powder = 1tsp
Turmeric powder = 1/2tsp
Pepper powder = 1/8tsp
Salt = to taste
Oil/Dalda = 4 to 5tbsp
Hot water = 3cups

to grind(smooth paste)
Ginger = 1inch
Garlic = 8 - 10 cloves
Green chillies = 10

whole spices
Bay leaves = 5
Cloves = 5 to 6
Cinnamon = 1inch
Fennel seeds = 1tsp
Star anise = 1
Mace = 1

Method

Heat oil in a pressure cooker and add the whole spices,fry them for 10 seconds
Add the roughly chopped onion and saute till it turns light brown and then add the chopped mint and coriander leaves,ground paste and fry for 2minutes
Add coriander powder,turmeric and pepper powder and the mutton pieces,saute for a while and then add lemon juice and diced tomato
Allow to cook for about 10 to 12 minutes


Add the rice(soaked for 30mins & drained)and fry for a minute


Add the 3cups of hot water,salt and mix thoroughly


When it starts to boil,close lid and cook till a whistle
Remove from heat,open the lid of the cooker once the pressure inside has decreased

Serve hot with raita
