Homemade Garam Masala powder

Ingredients
Fennel seeds = 50g
Cinnamon = 50g
Cardamom = 25g
Star anise = 25g
Black pepper = 25g
Coriander seeds = 25g
Clove = 25g
Mace = 5g
Bay leaf = 20 numbers
Nutmeg = 5 numbers
Method
Sun dry all the above ingredients
Dry roast slightly
Cool and powder fine
Roasting it dry, enhances the flavour and aroma of the spices.Their seed coats and barks protect their flavour,which are released only when ground or heated.
